Rainy day.... Baking day......

Rainy morning here...  Seems like it will be a good day, to use our spring rhubarb, in baking.  My husband always loves a Rhubarb Pie in the spring.  But after being in hospital, with pancreas, he really has to eat low fat.   Now my homemade crust, is delicious, but it is not low fat.   

So....  I figure I will make him a "little pie."  A galette.  Which is still my pastry...  Still the rhubarb pie filling.   But smaller.  :-)

And with the rest, we can make rhubarb sauce.  To put over other things.
This is a veggie dinner we had recently.  Sauteed mushrooms and squash.  Fiddle Head Ferns.  Fresh asparagus.  :-)
An avacado, pear, and banana, which I had on my island.  Just a pretty little, and healthy little, centerpiece.  :-)

Hope some of you, were able to see the Full Flower Moon last night.  I saw it, on Friday night.  But we were overcast, last night.

Your veggie dinner looks great. :) I use coconut oil for my pie crusts but don't make them very often.

Tessa, I was so tired last night, I went to bed early. But I saw the moon as I walked to the mailbox this morning. I did not people could eat ferns..what does it taste like? Is it like greens or spicy? Hope your husband loves his pie. Blessings, xoxo, Susie

We had them first, in a French restaurant. And look for them, in our Healthy Living Market, in spring. We'd not go out and try to find them in the wild, though. :-)

Simply saute them, with some salt and pepper and enjoy.

Some say they are an acquired taste, of course. But we think they are coooool....

ich esse auch sehr gerne frisches Obst und Gemüse . Da braucht es auch kein Fleisch . Im Moment mag ich total gerne Orangen . Ich hab keine Ahnung warum .

A nice healthy dinner. I've never eaten fiddlehead ferns. Many people make strawberry rhubarb pies. When I was a kid I remember snapping off the rhubarb and chewing it...what a sour taste. Rain here today again but a nice week coming our way.

Hope your husband is feeling much better. I'm glad he can still have small treats. I love seeing those sautéed fiddle heads.

I love rainy days, Tessa. Your dinner looks delicious. I've never heard of fiddle head ferns before, but I love sautéed mushrooms. Your home is charming, and that lamp is so pretty. Ooooo, those twinkling lights make me smile. :)

I looked for the full flower moon last night, but didn't see anything.

Great minds think alike...a rhubarb pie! So very good! I so hope your husband is on the mend. I will tell you we never ever heard of fiddleheads until we moved to Maine. Never tried them...it sounded like eating dandelions! But they were featured on the fresh farm menus everywhere! Lovely photos Tessa. We did not get to see the Flower Moon which is also new to me...can't wait for the next one! Have a great week dear one!

Total overcast so we couldn't see the moon very well...
your veggie dinner looks great...we try to have at least one every week...we always want buttered cornbread and onion with it. :)
